The shortbread crust of sweet, unsalted butter, sugar and flour is pre-baked until golden brown. The lemon “pudding” is a combination of fresh squeezed lemon juice and hand microplaned lemon zest whisked together with flour, eggs and sugar. The pudding is poured over the shortbread crust and baked until deliciously golden. They are then finished with a covering of sifted powdered sugar. All you need to do is add a final sifting of powdered sugar just before serving for refreshing perfection! Each bar measures approximately 2-2 ½ inches square.
