Black and White Angel Food Cake

This cake features light as a feather whipped egg whites, superfine sugar and hand grated Belgian chocolate.  When sliced, the cake looks like it has been sprinkled with chocolate confetti inside!  It is finished with a blanket of ganache, featuring a combination of heavy cream and semi sweet and bittersweet Belgian chocolate.  Take this cake over the top with a ring of hand dipped, chocolate covered strawberries.  Strawberries can be dipped in either a semi sweet/bittersweet combination or white chocolate and drizzled with the semi sweet/bittersweet combination.    A truly special cake!

The shortbread crust of sweet, unsalted butter, sugar and flour is pre-baked until golden brown.  The lemon “pudding” is a combination of fresh squeezed lemon juice and hand microplaned lemon zest whisked together with flour, eggs and sugar.  The pudding is poured over the shortbread crust and baked until deliciously golden.  They are then finished with a covering of sifted powdered sugar.  All you need to do is add a final sifting of powdered sugar just before serving for refreshing perfection!  Each bar measures approximately 2-2 ½ inches square.

An oval shaped, butter cookie infused with the flavors of cinnamon and hand microplaned orange zest and hand squeezed fresh orange juice, this cookie has a slight crunch in its texture due to the addition of semolina to the cookie dough. The cooled cookies are individually dipped in the boiling hot, sugar, lemon, honey and cinnamon stick infused syrup, placed on a rack and then sprinkled with crushed nuts mixed with cinnamon and sugar.

This classic, traditional sweet bread is infused with the flavor of hand microplaned fresh orange zest, fresh squeezed orange juice, and mortar and pestle ground wild cherry kernels.  The dough is braided and finished with an egg wash and a sprinkling of sesame seeds and baked to a beautiful golden color.  Loaf weighs approx. 1.25 lbs.  Larger 2.5 lb. loaf available upon request.
